Earth’s atmosphere consists of Nitrogen (78.09%), Oxygen (20.95%), Argon (0.93%), Carbon Dioxide (0.04%), traces of other gases and water vapour. Changing this balance results in a modified atmosphere.

Each food product, depending on its composition and properties, has its ideal modified atmosphere. Those with a high fat content will benefit from replacing the oxidative oxygen surrounding the product with inert nitrogen. The ones where microbial, yeast or mold growth is a concern will benefit from bacteriostatic CO₂. Finally the ones that need to respire or maintain a nice red colour will need a bit of oxygen.
